About Us: Now in my third season, I've been making small-batch puff- pastry by hand. I've found a domestic butter with a higher butterfat content than ordinary butter and I use prodigious amounts of it for my pastry. The fruit tarts evolve over the course of the growing season depending on what's ripe. Fresh cherries poached in red wine; peaches poached in brandy syrup; apricots poached in saffron syrup; blueberries with lemon zest; Mirabelle plums poached in sweet Marsala; sliced apples in lemon juice. The savory tarts also vary: in the spring and early summer it's asparagus; as the season progresses I shall make pissaladières (onions sautéed with fresh rosemary and lavender until they've caramelized, topped with anchovies (or not) and fresh basil). I continue to come up with more combinations. All tarts are baked on the day of sale so that you have the very freshest product.  The Art of the Tart caters to those who want a fine and well-made pastry with no stinting on anything.

Our animals’ diet consists entirely of pasture plants, kelp, organically approved minerals and salt. About Us: Rusty Plough Farm is a small family farm, growing organic (NOFA-NY Certified Organic, LLC) vegetables, flowers and berries, as well as eggs from our free-range hens. Nestled between the Shawangunk Mountains and the Catskills, our farm consists of 36 acres, including: crop fields; wild blueberry stands; woodlots; a pond; a maze of old stone walls; an old rusty plough; wild turkeys, deer, hawks, squirrels; the occasional bear; multitudes of frogs and newts; Sneakers & Sandy the barncats; and the house, barn, and greenhouse. What: From Asparagus to Zucchini, we will be growing all kinds of veggies.  We will also be offering eggs from our 100 hen flock of pastured Barred Rock laying hens.  
Where: The Second Wind CSA is brand New for 2009.  We will be farming land on the Four Winds Farm.  Our distributions will be held on the farm on Tuesday and Saturday afternoons.
About Us: We came to Gardiner, NY from Santa Fe, NM in April of 2008 to learn about No-Till farming at the Four Winds Farm.  For 2009 we will have the exciting opportunity of running our own CSA.  All of the produce will be grown by us on land that Jay and Polly are letting us use for the CSA.  We will be practicing the No-Till method of farming.  What this means is that none of the land that we use to grow our veggies will be plowed or roto-tilled.  All of the beds are permanent.  The soil fertility comes from an annual dose of compost which we lay on thick, like a mulch.  We then sow seeds and transplant seedling directly into this compost/mulch.  The plants thrive and everything tastes great, in fact it seems to stay fresh longer.  This method of farming also drastically reduces the presence of annual weeds because the soil is always covered with compost and no new weed seeds are turned up by the plough.  No-Till farming also cuts our carbon footprint.  All of the carbon sequesterd by plants gets to stay in the soil because it is not burned up by in the rapid soil oxidization caused by ploughing and tilling.

About Us and Farming Practices:  Pastured on 200 acres, our cows and goats enjoy the full spectrum of seasonal grazing.  The breeds of cows include Jersey, Guernsey, Normande, Holstein, Brown Swiss, and Milking Shorthorn. The breeds of goats include Oberhasli, Nubian, and Toggenburg.  The reason for so many breeds is because of our educational mission.  Exposure to the differences in breeds can be important for production, management, and makes learning more enjoyable for children and adults when there are differences they can see. We make hormone and antibiotic free raw milk cheeses of various kinds including four stinky washed rind, 6 semi-firm to firm natural rind, including blue; pasteurized cheeses aged less than the required 60 days for raw milk cheeses such as 2 bloomy rind, ricotta and fresh goat.  About 14 different cheeses in all.  Three of our cheeses are made with microbial rennet and the rest with veal rennet.  For our programs and for consumption, we also have pigs, chickens, ducks, and sheep. We sell limited amounts of our pork and young beef, turkeys, lamb in season, and eggs in our on-site market.  Our gardens serve the summer program participants who learn everything from soil to table. A limited amount of produce is also available in our market in season.  From November through April we have the Rusty Bucket Series, a source of entertainment, information, a chance to discuss relevant issues around food, agriculture, green building, energy, and a chance to eat soups, breads, and cheeses all the while! Where: Most of our sales are to the High Falls Coop, Adam’s Fair Acre Farms in Kingston and Saunderskill Farm Market in Accord, although we do some direct sales, I’d like to limit it to the weekends as much as possible due to my time constraints. I’m usually available M – F after 5 PM till dark, Sat & Sun after 1 PM till dark. 
About Us and Farming Practices: We’ve been in business since the early ‘60’s (I obtained a DBA from Ulster County late last year) and have always followed the Organic guidelines, although we are not “certified organic”. We raise all of our own seedlings from certified organic seed where possible. Soil amendments include: composted manures, granular lime, blood meal, bone meal, wood ashes, green sand and osomite (pulverized volcanic). If we have an insect infestation which we cannot control mechanically, we may use rotenone as a last resort; I think we used it a few times last year in localized areas of the potatoes and cabbage. My Dad still loves to give tours, and something he calls “nibble walks”. . We generally start picking around mid May and finish up sometime in November, although we had potatoes and winter squash in storage till the first of the year.
